Until 1882 only the wool was exported. New Zealand farmers sold the wool to factories in Britain. The sea journey to Britain was very long and slow, so meat could not be exported. But in 1882 the refrigerator was invented, and the ship could keep the meat cold. So meat could be exported. Most of the meat exported today is lamb, not mutton.
