Fried Eggs with Tomatoes
Ingredients
4 tortillas
4 eggs
1/3 chopped parsley
8 dollops sour cream
6 tomatoes,skinned,deseeded and chopped
1 onion,chopped
2 cloves garlic,crushed
2 green chillis,chopped
oil for frying
salt and pepper
Method
1.Blend the tomatoes,onion,garlic,chillis until chunky but not smooth.Cook for 5-10 min until slightly thickened.Season with salt and pepper.
2.Heat oil in a pan and fry the tortillas.Drain on absorbant paper.
3.Drain the excess oil and in the same pan,make fried eggs,2 at a time.
4.Place one egg on the tortilla; spoon over the tomato sauce,leaving the egg exposed.Sprinkle with parsley and 2 dollops of sour cream.Similarly,assemble the remaining tortillas.Serve immediately
