配料:柠檬1个,奶油5克,蛋黄5克,水500克.制法:柠檬去皮、挤汁;柠檬皮捣烂备用,淀粉用水浸透;再把白糖放入锅内,加500克水煮沸,加入捣烂的柠檬皮,使其降温,随后用纱布滤去柠檬皮.另取一锅,倒入滤出的柠檬糖水,加入蛋黄,不断搅打至起泡沫,倒入淀粉,再将锅置于文火上加热,使混合液变稠,离火,仍继续搅拌,晾凉后,加入柠檬汁和搅拌过的奶油,调匀后,入冰箱冻结即可.
